Strip away centuries of caricature &#8211; the gnawed bone, the watery gruel, the toothless peasant &#8211; and what emerges is something far richer: a culinary world shaped by faith, catastrophe, social ambition, and a genuine delight in flavour that even the humblest household found ways to express.</em></p><h3><strong>The Peasant Table</strong></h3><h4><strong>Not as grim as you have been told</strong></h4><p>The dominant image of peasant food &#8212; a thin, tasteless pottage ladled into a bowl by a fire &#8212; is not entirely wrong, but it is badly incomplete. Pottage was indeed the daily anchor of the common diet, a thick stew of grains, legumes, and whatever vegetables the kitchen garden yielded. But it was rarely the grey, flavourless sludge of popular imagination. Archaeological evidence and surviving household records from the 13th and 14th centuries reveal that even modest rural households routinely used garden herbs &#8212; parsley, sage, hyssop, and leeks &#8212; to season their cooking. The medieval peasant was not indifferent to taste; they simply worked with what the land and the season allowed.</p><p>Dairy, too, was more present than is often assumed. Cheese and butter were everyday staples, particularly in pastoral regions of England and northern France, and small quantities of cured pork, poultry, and river fish supplemented the grain-heavy diet on a fairly regular basis. The picture that emerges from the evidence is one of constrained variety rather than monotonous deprivation.</p><div class="captioned-image-container"><figure><a class="image-link image2
